Blueberry Dessert

I can’t believe I forgot all about posting this wonderful dessert, especially after mentioning in this post how much I love it. (Sorry, this picture really does not do it justice. It looks much better in person.)

For as long as I can remember, the blueberry stuff, as we like to call it around here, has been at family gatherings on my dad’s side of the family. One of my great aunts always brings this treat, and it has forever been a huge hit.

Now for the last several years, I’ve made it for church functions and other occasions that call for desserts. It’s become one of those foods that gets requested and then expected. For this reason, I almost always keep the ingredients on hand so I can whip it up anytime.

This is also very easy to make, which makes it even better. No cooking is required.

Here’s the recipe:

Ingredients:

  • 3 cups milk
  • 1 box graham crackers
  • 1 (5.25 oz) box  instant vanilla pie filling
  • 1 (8 oz) tub cool whip
  • 1 (21 oz) can blueberry pie filling

Directions:

  1. Mix vanilla pie filling with 3 cups milk and stir good.pudding1
  2. Add 8 oz cool whip. (The more it’s stirred the thicker it gets.)coolwhip1
  3. Layer graham crackers in the bottom of 9 x 13 pan.
  4. Layer 1/2 cool whip mixture.
  5. Repeat steps 3 & 4.crackers1
  6. Then put last layer of graham crackers on top.
  7. Spread blueberry pie filling on top of the graham crackers.
  8. Refrigerate until ready to serve.
