Cinnamon Cake

Before I quit work to stay home with my kids, I was working as a bookkeeper at an accounting office. Well, one of my clients would occasionally bring us a cake. She made several different kinds and even sold them.

There was one cake though that us girls at the office loved the most. It was her Cinnamon Cake. Grab a slice of this cake with a glass of milk or, better yet, a cup of coffee and you’ve got yourself one incredible dessert.

I decided one day to ask her if I could have the recipe. I figured all she could do was say no. Right? Well, she said she didn’t mind giving out her recipe at all. So, I’m going to share this super easy, fabulous cake recipe with you too.

Ingredients

CAKE

  • 1 box Duncan Hines yellow cake mix
  • 1 small box instant vanilla pudding mix
  • 1/3 cup oil
  • 1 cup water
  • 4 eggs
  • 1/2 cup brown sugar
  • 4 tbls flour
  • 3 tsp cinnamon
  • 2 tbls butter or margarine, melted

GLAZE

  • 4 tbls milk
  • 6 tbls butter or margarine, melted
  • 2 tsp vanilla
  • 2 cups Domino powdered sugar

Directions

  1. Mix first 5 ingredients for 2 minutes at medium speed.
  2. Pour half of the mixture into well greased tube pan. (I use Baker’s Joy.)
  3. Mix next 4 ingredients in a separate bowl.
  4. Sprinkle half of the sugar mixture over the cake and mix (just swirl it around a little) with a butter knife in the pan.
  5. Pour the rest of the cake batter in the pan and sprinkle the remaining sugar on top.
  6. Bake in a preheated over at 350 degrees for 45 minutes.
  7. Mix glaze and pour half over cake while hot, then pour remaining glaze over cake after it cools.

***You need to remove the cake from the pan five minutes after you take it out of oven, or it will stick to pan.***
