When the kids and I go to stay with my parents for a week or so, I usually do some of the cooking to help my mom out. Well, this week, they had some fresh corn, still in the husks, that they wanted me to cook.

Lately, I’ve been interested in finding a corn salad recipe to try anyway, so I started looking around for something I thought my parents might like too. After browsing several corn salad recipes, this is what I came up with and everyone really enjoyed it.

Creamy Corn Salad

Ingredients

  • 4 cups fresh corn, boiled and cut from the cob (or frozen corn)
  • 2 cups grated cheddar cheese
  • 1/2 cup green bell pepper, chopped
  • 1/2 cup red bell pepper, chopped
  • 1/4 cup red onion, chopped
  • 1 cup mayonnaise

Directions

  1. Mix all ingredients together well.
  2. Serve and enjoy!

Serves 6 - 8
