As promised, today I’m sharing a wonderful recipe for stuffed bell peppers. I got this recipe from my friend Kristy at Living the Mommy Life when we worked together.

Somehow it came up one day that I had never tried a stuffed bell pepper before, and honestly, I wasn’t sure I’d even like them. Well, she said she had a really good recipe, so I decided I’d give them a try. I’m oh so glad I did, because they are awesome.

I love the fact that they are super easy to throw together too.

Ingredients

  • 2 medium green peppers
  • 1/2 lb ground chuck
  • 1 - 8 oz can tomato sauce
  • 1/4 cup uncooked instant rice
  • 3 tbs shredded cheddar cheese
  • 1 tablespoon finely chopped onion
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 egg beaten

Directions

  1. Cut tops off pepper and discard; remove seeds.
  2. Blanch peppers in boiling water for 5 minutes.
  3. Drain and rinse in cold water; set aside.
  4. In a bowl, combine beef, 1/4 cup of tomato sauce, rice, 2 tablespoons of cheese, onion, Worcestershire sauce, salt, pepper and egg; mix well.
  5. Stuff the peppers; place in an ungreased 1 1/2 qt baking dish.
  6. Pour the remaining tomato sauce over peppers.
  7. Cover and bake at 350 degrees for 50 to 60 minutes or until meat is done and peppers are tender.
  8. Sprinkle with remaining cheese; return to oven for 5 minutes or until cheese is melted.

By the way, if the kids don’t like bell peppers, you can just take out some extra ground beef and make hamburgers for them while your peppers are in the oven cooking. I do this for mine. :)
