Menu Plan for the Week 8/21 – 8/27


What a week we had last week!! It was good. The kids started school, and they both like their teachers. That’s always a relief.

The best part of the week for me though was having my Lasik surgery last Thursday morning. I had worn glasses or contacts for over 10 years, so it’s really exciting to finally be able to see again without either of them.

When I went in for my post-op check up on Friday, I was able to read the 20/15 line. Of course, my eyes will probably fluctuate some over the next few weeks or months, but that’s definitely a good start.

Anyway, with those exciting events behind us, it’s time to get into a normal routine, which includes my meal plan for the week.

Here’s what’s cooking this week:



Lunches usually consist of leftovers from the night before, or grilled cheese quesadillas on whole wheat tortillas, fruit, and other quick fix foods.

In addition to these meals, I’m also planning on doing quite a bit of baking to get caught up on what I missed last week.

    Yummy sounding menu plan- I am doing a vegan thing for 30 days- but the cheese sounds really good about now! Congrats on Lasix- I would love to do that. We start school on Tuesday- back to packing lunches *sigh*

  • Wow what a menu, love all the baked goods and breakfasts!! I am also pinning your cheesy chicken and veggie bake, yum.

    So glad your lasik’s went well, I really want to get this done as well, I’ve worn glasses since the 4th grade, I can’t imagine waking up and seeing clearly!!

    Your menu sounds great!! I’d love to try the honey oatmeal bread.

    I’ve been thinking about Lasik, but I’m too chicken to try it :/ Glad your surgery went well!!

      Thanks Keli! The surgery was really not bad at all, not like I thought. My doctor was wonderful too. He told me everything I was about to see or feel as he went through the process. My only regret is that I didn’t have it done sooner.
