Simple Veggie Salad

I’ve got a super easy, tasty salad to share today. I got this recipe from my mother-in-law last Thanksgiving or Christmas. I can’t remember which holiday it was, but I do remember how much I loved this salad.

This is perfect to take to a church or family event because it is so easy, it can be made ahead of time, and it can easily be doubled to make a bunch.

I took this to church recently and was told later that the ladies in the kitchen didn’t get it out on the table until they had eaten about half of it. Now, I’m sure that was an exaggeration, but it still made me feel good to know they liked my salad so much. :)

Here’s the recipe:

Simple Veggie Salad

Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflowets
  • 1 pint cherry tomatoes
  • 1 medium red onion, sliced
  • 1/2 envelope ranch dressing mix
  • 1/3 cup oil
  • 1/8 cup apple cider vinegar

Directions

  1. In a large bowl, mix veggies together.
  2. In a small bowl, whisk dressing mix, oil and vinegar.
  3. Pour dressing mixture over veggies.
  4. Refrigerate for 1 hour.

Voila! Enjoy!!
