Who wants Oriental for Dinner?

I do! I do! That’s what you’d hear me say most of the time if asked that question. I love oriental food! Even though I love it, for the longest time I didn’t try to cook it because, I guess, I thought it would be too difficult.

Thankfully, I finally decided to give it a whirl. Today, I want to share a couple of my favorite oriental recipes, Egg Rolls and Fried Rice. Yeah, I know what you’re thinking. Egg rolls are a lot of work. Oh, but they are so worth it and they’re not at all hard, just a little time consuming.

Egg Rolls

Ingredients

  • 1 lb ground beef or pork, browned and drained
  • 3 green onions, chopped
  • 1 small reg onion, chopped
  • 3 tsp minced garlic
  • 3 carrots, peeled and chopped
  • 2 cups shredded cabbage
  • ground black pepper to taste
  • salt to taste
  • 1 package Egg Roll Wrappers

Directions

Once you have all your veggies chopped, saute them in a large skillet or wok in about a tablespoon of oil, just until the cabbage begins to wilt.

In a large bowl, mix the veggies and the browned meat together.

One egg roll wrapper at a time, begin to spoon the meat and veggie mixture diagonally down the center of each wrapper.

Then fold over the corner of the wrapper closest to you and fold the sides in toward the center.

Gently, roll it up as tightly as possible without tearing the wrapper. Use an egg and water mixture (one egg and about a tablespoon of water beaten together) to seal the top corner of the egg roll closed.

Finally, fry the rolls in batches of three or four at the time in 350 degree oil until golden brown. Be sure to turn them over frequently for even cooking.

I used my deep fryer, but you can also do this in a large frying pan on the stove.

Makes 18 - 20

Fried Rice

Ingredients

  • 6 slices bacon
  • 1/2 cup sliced green onions
  • 1 4-oz can mushrooms, drained
  • 2 cups cold, cooked rice
  • 2 tablespoons soy sauce
  • 1 egg, beaten

Directions

  1. Fry bacon until crisp. Remove from pan.
  2. Leave 1/4 cup of bacon drippings in skillet.
  3. Add green onions, mushrooms, and rice to hot drippings.
  4. Cook over moderately high heat for 5 minutes, stirring often.
  5. Add soy sauce and stir.
  6. Remove from heat and add beaten egg. Stir thoroughly.
  7. Cook over medium heat until egg is set, stirring constantly.
  8. Remove from heat and serve hot with crumbled bacon over top.

Makes 4 - 6 servings.

The above recipes are two of my favorites. Another favorite oriental food is sesame chicken. I haven’t tried making it at home yet, because I haven’t run across a good recipe yet. If you have any suggestions, I’d love to hear them.
