Well, I finally got my steak last week and it was delicious! The kids and I also got to make an extra fun little treat.
Have you ever had Knox blox? Honestly, I had never even heard of these until a few weeks ago. I had some awesome Knox coupons that landed me free Knox gelatine. The problem was, I had to find a way to use the Knox.
That was when my husband introduced me to Knox blox. His mom used to make these for him when he was a kid. It’s basically just a harder form of Jello that you can cut into squares or make shapes with cookie cutters without it falling apart on you.
Here’s what you need.
- 2 (3 oz) pkgs Jell-o Gelatin
- 3 envelopes Knox Gelatine
- 2 1/2 cups boiling water
- 8 x 11 baking dish
Here’s what you do.
- Mix the ingredients together very well in the baking dish.
- Refrigerate for about 3 hours to make sure it’s well hardened.
Then for the fun part, use cookie cutters to cut out fun shapes.
I recommend using good sharp cookie cutters. Mine are not very sharp so the cuts on our shapes were not as neat as I would have liked. Of course, the kids didn’t notice. They just thought it was fun to cut and eat the shapes.

- Monday - Sausage Gravy over Buttermilk Biscuits
- Tuesday - Clam Chowder with Oyster Crackers
- Wednesday - Spaghetti, Garlic Bread, Salad
- Thursday -Chicken Stir Fry over Rice, Spring Rolls
- Friday -Hamburgers, Baked Potato Wedges
- Saturday - Leftovers/Sandwiches
- Sunday - Eat Out

Until the last few days, I didn’t really realize just how much I depend on my computer. You see, last Sunday my Macbook died on me. Technically speaking, the hard drive went out.
Thankfully, my husband was able to recover all my files before replacing the hard drive. (It had been a while, or should I say way too long, since my last backup.) Lesson learned.
Anyway, back to my point.
I keep so much of my life on my computer -
- Recipes
- Photos
- Music
- Notes
- Calendar
- and spend too much time on the computer.
I can hardly remember what life was like before I became so dependent upon technology for many aspects of life. Just for the record, I admit I wasn’t without a computer, my husband left his so I would have one to use, but it just didn’t have all my stuff on it.
You know what I mean.
- The saved passwords for some of my favorite sites were not on his computer.
- My email accounts and RSS feed subscriptions were not set up on his computer.
- My Swagbucks toolbar was not at the top of the browser on his computer.
I could still get to most of all this stuff, but it was definitely more of a hassle.
So, you’re probably thinking this is sounding pretty drab about now, all about me missing my computer.
Well, the truth is I learned something from this whole ordeal. Since it was more difficult to do some of the things I take for granted on my computer, I just stayed away from the computer more the last few days.
By staying away, I actually was able to accomplish more around the house and I spent a little more time with the kids too. I learned that it’s not going to kill me if I only check my email or facebook twice a day, instead of 10 times a day. It was actually nice to take the break.
Maybe my computer dying was really a blessing in disguise.

Menu Plan Monday (2/22 - 2/27)
Well, this last week didn’t go quite like I had planned. I ended up curled up on the couch with a stomach virus and had to rearrange my menu slightly. That’s okay though, we’ll just be having one of last week’s meals (the steak meal) this week.
~Here’s what’s cooking this week~
Monday - Mini Meatloaves, Macaroni and Cheese Casserole, Steamed Broccoli
Tuesday - Steak, Cracker Barrel Green Beans, Honey-Oat Pan Rolls
Wednesday - Ham & Cheese Sandwiches
Thursday - Santa Fe Soup (We didn’t have this one either last week because we ended up going to a birthday party and they fed us. Yay!!)
Friday - Homemade Pizza, Salad, Brownies
Saturday - Crockpot Chili, Mexican Cornbread (I haven’t tried this chili before, so we’ll see how it turns out.)
Sunday - Eat Out
